Most refrigerated almond milks — even the premium ones — have been processed through HPP (High Pressure Processing) or thermal pasteurization to extend shelf life from a few days to 30, 45, or 60 days. Both processes alter what's in the bottle:
HPP heats the product. Pressurizing any liquid generates heat. That heat changes the texture and flavor of fresh almond milk.
It reduces nutrients. Independent research shows HPP can drop nutrient content to as low as 87% of original levels.
It's the reason most almond milk tastes flat. That slightly metallic, slightly chalky taste of a tetra pack? That's processing. Real almond milk doesn't taste like that.
Sabi never goes through HPP. That's why our shelf life is 5–7 days instead of 60. Fresh almond milk isn't supposed to last on a shelf for two months.
If a bottle doesn't carry this FDA-mandated warning, it's not truly raw:

Shelf Life — Best within 5–7 days of delivery. Always keep refrigerated. Shake well before pouring — separation is normal for real almond milk with no stabilizers.
Morning coffee, the right way. Pure Almond Milk is balanced for coffee — it adds creaminess without competing with your beans. Steam it like you would dairy milk (it foams, but gently — don't expect a barista microfoam). For a more indulgent option, splash Abuela's Choco into a shot of espresso for a 30-second mocha.
Cereal, oats, granola. Pure works for breakfast cereal and overnight oats. Abuela's Choco turns a bowl of plain oats into something that tastes like dessert (without acting like dessert).
Your own smoothies. Both bottles work as a smoothie base. Use Pure for green smoothies, fruit smoothies, or anything where you want the milk to step back. Use Abuela's Choco anywhere you'd reach for chocolate milk — banana smoothies, post-workout shakes, the kid breakfast that doesn't feel like a compromise.
Drink it cold from the bottle. This is mostly an Abuela's Choco play. Shake the bottle, pour into a glass over ice, drink. Carmen would.
Warm it on the stove. Both bottles warm beautifully. Abuela's Choco on the stove is the cold-night ritual — heat gently, don't boil, sip slowly. The basil and cinnamon come through more when warm.

Pure Almond Milk: Yes, completely unsweetened. Sweetness comes only from the almonds and a touch of vanilla. Abuela's Choco Milk: Sweetened only with dates — no cane sugar, no agave, no syrups. Naturally sweet, but not dessert-sweet.

No. Both bottles contain almonds. If you have a tree nut allergy, these are not for you.
Absolutely. Both work as a 1:1 substitute for dairy milk in baking, pancakes, French toast, and most savory cooking. Pure is the most versatile. Abuela's Choco is incredible in chocolate cakes, brownies, and bread pudding.
We don't recommend it. Real almond milk doesn't freeze and thaw cleanly without stabilizers — texture suffers. Drink fresh.
Possibly, especially with very acidic coffee or very hot espresso. To prevent curdling: warm the almond milk gently before adding it, or pour the milk into the cup first and add the coffee on top. Curdling is a real almond milk thing — tetra packs prevent it with stabilizers we don't use.
HPP, or High Pressure Processing, is a step many "fresh" plant milk brands use to extend shelf life by pressurizing bottled product up to 85,000 PSI. It heats the product, reduces nutrient content, and changes the texture. Sabi skips it entirely.
